A CWMBRAN butcher will join top chefs at the Abergavenny Food Festival this weekend for a demonstration of his skills.
Croesllan Catering Butchers of Cwmbran supply some of Gwent's most exclusive eateries, including Newport's Celtic Manor, the Walnut Tree in Abergavenny, and the Angel Hotel in Abergavenny.
And on Sunday Sean Willis, the owner of Croesllan, will join a host of stars at the event for a live butchery and cookery demonstration.
Sean said: "I'm presenting one half of a butchery and cookery class with Michael Bates, the head chef at the Celtic Manor.
"We're going to make a breakfast, a lunch and a dinner all of local produce - beef, lamb and home-cured bacon.
"He'll be doing the cooking and choosing little bits for people to sample.
" It's going to be quick, easy simple meals.
"This is my first time at the Abergavenny Festival. I will be nervous on the day but I won't really think about it."
Five years ago, Sean was a chartered surveyor living and working in London, but when an opportunity to own his own catering business came up he decided to carve out a new career.
"Butchery is in my blood," he explained. "It's my family business but I wouldn't call myself a master butcher because the boys here would lynch me.
"The family's been in the business since my grandfather, who's been a butcher for 60 years.
"He's in his late 70s and still working."
The butchery and cookery demonstration by Sean Willis and Michael Bates will take place in the Market Hall at 2pm on Sunday.
