THE owners of one of Wales' most famous restaurants sent out a message of defiance after losing its place in the prestigious Michelin Guide.
The Walnut Tree Inn in Llandewi Skirrid, pictured above, was excluded from the new guide, which rates top restaurants, published today.
The news comes after a year of lows for the popular restaurant, which included long-term injuries to key staff and, significantly, chef Stephen Terry leaving. The Guide is citing a change of chefs as the reason for the decision.
But Enrica Mattioli, wife of owner Francesco, said it would be "business as usual" when the restaurant opened its doors today.
Mrs Mattioli said: "Losing the star was one of those things. We try our best so it would have been nice to keep it.
"But our new chef arrives next month so who knows what will happen. With or without the star our food and service is top quality."
