WHAT is edible, weighs nearly 100 kilograms and is white in colour?
The answer lies in award-winning Newport Italian restaurant Gemelii's, whose chefs have produced a Valentine's Day heart-shaped sculpture made out of white chocolate.
The work-of-art, which was on show in the Cinotti family's Bridge Street premises last week, was yesterday transported to the home of one of their customers in Oxford, who asked head chef Sergio Cinotti to make something extravagant for his fiance.
So Mr Cinotti worked out the love heart design on paper, before him, his twin brother Pasquale and chefs Vincenzo and Libero got to work carving it from a 100 kilogram block of chocolate.
The whole process of creating the angels, cherubs and flowers was so intricate, it took weeks to make.
At times, the team had to wait for chocolate to set after they melted it to create certain shapes.
"It is always a challenge," Sergio Cinotti said.
"Sometimes you may have planned something but have to change things and be creative, as anything can happen."
To protect the sculpture, it was transported to Oxford in a refrigerated van, wrapped in a polystyrene case.
However tonight, Gemelli's customers will get to taste a piece of it, as the chefs made a smaller replica.
Their next task will be to create a huge wedding cake with a water feature in the middle, for more than 400 guests.
